Trader Joe's Crunchy Chile Onion peanuts go great on top! 1 1/2 lbs boneless skinless chicken breasts or thighs, cut into bite-sized chunks 1/4 cup plain unsweetened nut milk 2 tablespoons tamari 2 teaspoons fish sauce 1 tbsp red curry paste 2 teaspoons honey 1/2 teaspoon yellow curry powder juice of 1/2 lime (other 1/2 will be used in Peanut Sauce below) Peanut Sauce: 1 tablespoon avocado oil 1/2” piece fresh ginger, grated or finely minced 2 cloves garlic, minced 1-3 tbsp honey (sweeten depending on preference) 2 tablespoons rice vinegar 2 tablespoons tamari 1 teaspoon fish sauce (optional) 1/2 cup creamy peanut butter 2 tablespoons red curry paste juice of 1/2 fresh lime up to 1/2 cup chicken bone broth to thin For serving: cilantro, dry roasted peanuts, lime Directions: Combine ingredients and marinate chicken for 1-2 hours (up to overnight) Soak 8-10 bamboo skewers thread chicken onto each skewer Heat a grill panover medium high Cook for 4-5 minutes on both sides While the chicken is cooking start making the peanut sauce by heating avocado oil over medium heat Add ginger, garlic, and red curry paste and saute for 2-3 minutes Whisk in vinegar, honey, tamari, peanut butter, fish sauce and lime juice and cook for another 1-2 minutesAdd bone broth to thin to desired consistency

My go-to lunch lately that’s protein-packed, a fabulous source of fiber, and SO fresh and flavorful. All of the classic contenders of tzatziki (yogurt, dill, lemon, garlic, and cukes) combined with tuna, chickpeas, and pickled red onion. I love pairing it with homemade za’atar pita chips, however it’s also delicious on a sandwich or wrap, or scooped up with tortilla chips. FULL RECIPE Serves 3 1 cup plain full-fat Greek yogurt (I use @fage brand) 1/4 cup chopped fresh dill, plus more for garnish 3 Tbsp. chopped fresh chives 2 Tbsp. fresh lemon juice 2 Tbsp. extra-virgin olive oil, plus more for garnish 2 Tbsp. finely chopped capers 1 garlic clove, grated 3 Persian (“mini”) cucumbers, diced 1 (15-oz.) can chickpeas, drained and rinsed 1 (5-oz.) can tuna (I use albacore), drained Pickled red onions for serving (optional) Za’atar Pita Chips 3 large pita rounds, cut into small triangles 3 Tbsp. extra-virgin olive oil 1 tsp. za’atar 1 tsp. dried oregano 1 tsp. garlic powder 1/2 tsp. kosher salt 1. Prepare pita chips by tossing pita triangles in oil and spices on a large baking sheet. Bake at 375ºF for ~15 mins, tossing once midway through, until golden and crispy. Set aside to cool. 2. If making the salad ahead, place diced cucumbers in a colander and sprinkle with kosher salt. Let sit for 20 minutes. Drain and pat dry with a paper towel before adding to salad. (This draws out moisture, which prevents them from getting watery once added to the salad.) If prepping the salad to enjoy immediately, skip this step. 3. In a large bowl, combine yogurt, dill, chives, lemon juice, olive oil, capers, garlic, and a good pinch of salt and pepper; mix to combine. Add chickpeas and partially mash with a fork or potato masher (I like to mash about half). Stir in tuna and cucumbers. Taste and adjust seasoning as needed (you may want extra salt and/or pepper -

My personal modifications inspired by the linked recipe Yield 4 servings 1½ to 2pounds boneless, skinless chicken thighs or breasts Kosher salt, and black pepper ⅓ cup mayonnaise or yogurt 1 tablespoon lime zest (from about 2 limes), plus lime wedges, for serving 2 tablespoons finely grated fresh ginger 1 garlic clove, pressed 1-2 tablespoons of lime juice pinch of cayenne Step 1 Pat the chicken dry and season all over with 1½ teaspoons salt. In a medium bowl, stir together the mayonnaise, lime zest and ginger; season with salt and pepper. Add the chicken to the mayonnaise mixture and stir to coat. (The chicken can sit in the marinade for up to 8 hours in the fridge. Let come to room temperature before cooking.) Step 2 To grill: Heat a grill to medium-high. Grill the chicken over direct heat until cooked through and juices run clear, about 5 minutes per side for thighs and about 4 minutes per side for breasts, turning as necessary to avoid burning. Step 3 To cook in a skillet: Heat a large skillet over medium-high. Cook the chicken until juices run clear, about 5 minutes per side for thighs and about 4 minutes per side for breasts. Step 4 Serve chicken with lime wedges, for squeezing on top.
